A little preparation for you on the weekends will work wonders for you during the week. I’m a huge fan of making “Healthy Egg Cupcakes”.
They are great for people with little to no time in the mornings. Here’s how you make them:
24 eggs/ or egg whites, depending on your dietary goals and needs, or a combination of both.
Turkey bacon or turkey sausage to taste
Chopped Cherry Tomatoes
Shallots/ Green Onion
No Salt Seasoning
Preheat Oven to 180 C.
Lightly Spray your cupcake tin with olive oil. Set aside.
If you are adding in turkey bacon, heat your pan to medium to half cook this first for 4 minutes or so. Take out of the pan and chop up into tiny pieces.
Add the turkey bacon and 24 eggs into a large bowl.
Chop all of the other ingredients up into tiny pieces. Add into the bowl and mix. Finish with no salt seasoning.
Evenly distribute in the cupcake tin, each cupcake being 1/2 to 3/4 full.
Put into the oven and leave for 15–20 minutes.
Remove to cool, then take out and portion it for the week. A normal serving size is 1–2.
They are great for freezing or refrigerating then removing and quickly reheating by nuking in the microwave in the morning. Good luck!
